1. | 準備糖醋醬汁。 |
2. | 將排骨用基本醃料(濃)醃30分鐘。 |
3. | 醃完後的排骨與地瓜粉拌勻。 |
4. | 氣炸鍋設定在400°F(205°C)。將小排骨放進氣炸鍋炸8分鐘,取出排骨翻面後再炸7分鐘即可。如果沒有氣炸鍋,將小排骨放進350°F(175°C)油內炸熟,大約4分鐘。撈出放在紙巾上吸去多餘的油份。 |
5. | 炒鍋燒熱後加入2大匙油,蒜片,薑片炒香,再加入糖醋醬汁和蔥用中火和煮稠。最後加入炸排骨和白芝麻翻炒至每塊排骨都裹上醬汁。趁熱食用。 |
PROCEDURE
1. | Prepare the Sweet & Sour Sauce. |
2. | Marinate the spare ribs with Basic Marinade (Dark)(濃) for 30 minutes. |
3. | Mix the marinated spare ribs with yam starch. |
4. | Set the air fryer to 400°F(205°C)。Place the spare ribs in the air fryer and fry for 8 minutes. Turn each piece of spare rib over and fry for another 7 minutes. If not using an air fryer, deep fry the spare ribs in 350°F(175°C) oil until they are thoroughly cooked, approx. 4 minutes. Transfer the fried spare ribs onto paper towels to absorb the excessive oil. |
5. | Add 2 tbs. of oil, garlic and ginger in a heated pan; sauté until aromatic. Place in the Sweet & Sour Sauce and scallion; cook over medium heat until the sauce is thick. Add the fried spare ribs and sesame seeds; stir until every piece of spare rib is coated with sauce. Serve immediately. |
